A wholesome, healthy twist on comfort food—whole grain pasta baked in a creamy sweet potato and cheddar cheese sauce with ricotta for extra richness. This recipe is a favorite among Sporting KC players and courtesy of Sporting KC nutritionist, chef Janelle.

A wholesome, healthy twist on comfort food—whole grain pasta baked in a creamy sweet potato and cheddar cheese sauce with ricotta for extra richness. This recipe is a favorite among Sporting KC players and courtesy of Sporting KC nutritionist, chef Janelle.

  1. Cook macaroni according to manufacturer’s directions in salted water, minus one minute.
  2. Drain and rinse with cold water.
  3. In a separate saucepan, cook onion in EVOO until translucent.
  4. Add mustard, sweet potato and milk.
  5. Cook until sweet potato is tender; approximately 12 minutes.
  6. Remove from heat and cool for 10-15 minutes.
  7. Puree milk/sweet potato mixture with an immersion blender or in a blender, being careful of the hot liquid.
  8. Toss macaroni with 4 ounces of the shredded cheddar and place in a greased baking pan.
  9. Pour milk mixture over pasta to cover and top with remaining cheese.
  10. Cover loosely with greased foil or parchment paper and bake for 20 minutes.
  11. Carefully remove cover and bake an additional 10 minutes until golden brown.
