Chef Janelle's Sweet Potato Mac and Cheese

A wholesome, healthy twist on comfort food—whole grain pasta baked in a creamy sweet potato and cheddar cheese sauce with ricotta for extra richness. This recipe is a favorite among Sporting KC players and courtesy of Sporting KC nutritionist, chef Janelle.
- Cook macaroni according to manufacturer’s directions in salted water, minus one minute.
- Drain and rinse with cold water.
- In a separate saucepan, cook onion in EVOO until translucent.
- Add mustard, sweet potato and milk.
- Cook until sweet potato is tender; approximately 12 minutes.
- Remove from heat and cool for 10-15 minutes.
- Puree milk/sweet potato mixture with an immersion blender or in a blender, being careful of the hot liquid.
- Toss macaroni with 4 ounces of the shredded cheddar and place in a greased baking pan.
- Pour milk mixture over pasta to cover and top with remaining cheese.
- Cover loosely with greased foil or parchment paper and bake for 20 minutes.
- Carefully remove cover and bake an additional 10 minutes until golden brown.
